Brussells Sprouts, Smoked Almonds, Chestnut and Pomegranate Salad

Serves: 4-6 as part of a mezze

Brusells sprouts are loaded with fibre, vitamins and minerals, so amongst all the super indulgent Christmas food, try this delicious winter salad. It’s super crunchy, beautifully balanced and the pomegranates create a beautiful jeweled finish, perfect for a Christmas spread. 


Chef Tip

Smoked almonds add a new level of flavour but if you can’t get hold of smoked almonds, then toasted almonds will still work really well. 


300g Brussels sprouts

85g smoked almonds, we use Dormans

120g whole cooked chestnuts, roughly chopped

100g pomegranate seeds

30g parsley


2 tbsp sherry vinegar 

12 tbsp olive oil 

2 clementines, juiced

1 tsp sweet smoked paprika

Salt and pepper


  1. Begin by making the dressing, whisk all ingredients together and set aside. 
  2. Finely shred brussels either using a very sharp knife, or a mandolin and place in a bowl.
  3. Add smoked almonds, cooked chestnuts, parsley and dressing. Toss to combine and then scatter pomegranate seeds on top. Serve immediately.
